These vines are organically grown and hand-harvested at the peak of ripeness and vinified in glazed concrete vats with pump-overs and rack and return techniques. Following settling with a vertical press, the wine undergoes a maturation period of 12 months in concrete tanks and 500-liter casks of first and second use. Finally, the wine is further refined in the bottle for 24 months before its release.
