About Thomas Perseval La Masure Rose de Maceration
Within the context of the philosophical currents of the 18th century, marked by revolutions, the Enlightenment, and the emergence of new political, social, and economic systems that challenged the Old Regime, liberalism stands out as one of the most influential ideologies. This perspective advocated for individual freedom and the protection of private property, and in France, these ideas reached their pinnacle through the concept of "laissez-faire." A phrase linked to the renowned response of the French finance minister Jean-Baptiste Colbert: "Laissez faire, laissez passer," translating to "let do, let pass," used in opposition to the interventionist policies of that era, thereby marking the beginning of liberal economic thought. In alignment with this "let do," Thomas Perseval, a champagne winemaker who champions minimal intervention and utmost respect for the terroir, presents us with a collection of wines that demonstrate that another champagne is making a strong entrance.
Hailing from a long lineage of farmers in the Champagne region, since Thomas Perseval took the helm of the family estate in the charming village of Chamery, he transitioned to organic viticulture and biological treatments. A bold move that allows for the enjoyment of creations such as Thomas Perseval La Rose Maceration. A rosé sparkling wine composed of pinot noir and chardonnay from vines planted in 1974 on clay-sandy and calcareous-clay soils, with treatments carried out using plant infusions, applying cover crops, and reactivating biological activity. In the winery, the selected grapes undergo spontaneous fermentation with native yeasts and a 12-hour skin maceration with the grape skins. Afterwards, the wine ages for 8 months in oak barrels, and finally, a second fermentation in the bottle takes place over 32 months before disgorgement.
