Thymiopoulos Xinomavro Jeunes Vignes is a young red wine made by Apostolos Thymiopoulos in the PDO Naoussa, in Macedonia (Greece) with the native Xinomavro variety.
 
Apostolos Thymiopoulos is a winemaker known for understanding the native Xinomavro variety better than anyone. When he took on the family estate located in the north of Greece, in central Macedonia, he stopped selling the grapes his ancestors had sold to other neighboring wineries in order to start making his own wines. He now makes elegant wines with a Mediterranean character.
 
Thymiopoulos Xinomavro Jeunes Vignes comes from a mixture of plots lying at an altitude of 200-500 metres above sea level. These are young vines planted on shale, granite and limestone soils that grow under the influence of a continental microclimate. They are cultivated using biodynamic agriculture and the harvest is carried out manually and late to achieve maximum ripeness.
 
In the winery, 75% of the harvest is destemmed and the rest of the grapes are pressed in whole clusters. The Thymiopoulos Xinomavro Jeunes Vignes must macerates with skins for 12-15 days and ferments spontaneously with native yeasts in stainless steel tanks for 3 months. Finally the wine ages for 8 months in concrete tanks.
 
Apostolos is a true ambassador of the local Greek variety Xinomavro and a respected Greek winemaker. Thymiopoulos Xinomavro Jeunes Vignes is a brilliant and complex as well as very pleasant wine.
