About UBE Caserío de Miraflores Alta

There are places that, even when time covers them in dust, continue to breathe history. One such place is the Caserío de Miraflores Alta, a derelict building that once was the heart of legendary vineyards in Sanlúcar de Barrameda, in Cádiz (Andalusia). Those vines belonged to Rodríguez Lacave, and from them emerged the renowned Manzanilla Barbiana, a wine that defined an era.

Decades later, Ramiro Ibáñez—the inquisitive mind behind Cota 45—stumbled upon a forgotten box of magnum bottles of that Barbiana. Upon tasting one, he had no doubt, immediately declaring it “the finest manzanilla he had ever tasted in his life”. This discovery sparked an inspiration. The voice of that place needed to be revived.

Thus, UBE Caserío de Miraflores Alta was born, a tribute to the memory of that vineyard and its saline spirit. Crafted from 100% listán blanco (palomino fino) from the upper parcels of Miraflores, the wine embodies the limestone strength of its soil and the Atlantic elegance of its surroundings. The clusters are pressed whole, and the must ferments spontaneously in an old 600-litre manzanilla cask. Subsequently, the wine rests for 9 months, undergoing biological ageing under a veil of flor.

Saline, tense, and full of character, UBE Caserío de Miraflores Alta captures the purest essence of Sanlúcar. A wine that merges tradition and freshness, reclaiming the essence of a legendary vineyard under the watchful eye of Ramiro Ibáñez.
