About Abeica Chulato

While touring the bars and taverns of La Rioja, you will likely hear the same request repeatedly: "A glass of Chulato, please." Without a doubt, you have encountered one of the most renowned reds of the D.O.Ca.Rioja.
 
Despite having over five generations dedicated to viticulture, this is the moment when the name Abeica is becoming commonplace on many lips, not only for savouring Abeica Chulato (their carbonic maceration red), but also due to their oenologists, Isabel Fernández and Ricardo Fernández (included in the list of the 100 young talents of Spanish gastronomy), and the quality their wines are showcasing. The seed of this family business was planted by their great-great-grandfather Julián, a cooper by trade who acquired vineyards for his own use. Would he be proud that his wine and vineyards would end up being among the most acclaimed of the D.O.Ca. Rioja? Surely, he would.
 
Abeica Chulato is a carbonic maceration red, fermented with whole clusters, crafted in an artisanal manner. Always striving for sustainability and carefully selecting the clusters that will enter the winery, the Fernández family manages to bring out the best from their vineyards located in Ábalos and San Vicente de la Sonsierra. In both terrains, tempranillo is the most cultivated variety, followed by viura, garnacha, and mazuelo. All of them thrive perfectly in the clay-limestone soils found just below the Sonsierra Riojana, which protects the vines from the strong thermal contrasts between day and night. Here, between 450 and 590 meters of altitude, the subsoil facilitates water, making viticulture much easier. The harvest is carried out manually once the grapes show the right ripeness and acidity, allowed by the Atlantic climate of the area (this usually happens around October 2nd).
 
Finally, carbonic maceration will be fundamental in the production process of Abeica Chulato, where the clusters are whole-cluster fermented, achieving a significant fruit load. In this process, very common in this area, the clusters at the bottom of the tank break under their weight, releasing some of the must that will start to ferment thanks to the indigenous yeasts found in the grape skins. Ultimately, and without any other intervention, Abeica Chulato is naturally stabilized and bottled.
