This inversion of the obvious—where clarity does not rely on colour but on contrast—opened a new way of understanding perception: the invisible is not an absence, but another form of presence.

This same logic of silent transformation, where darkness becomes the source of clarity, finds its echo in certain methods where the raw material is interpreted against its own expected destiny. In this context, Codorníu, one of the historic cava houses in Spain, has mastered the interpretation of this duality between tradition and innovation as a form of creative continuity. Anna de Codorníu Blanc de Noirs Brut is born from carefully selected red grapes, primarily pinot noir, cultivated in vineyards around the Penedès region, where the Mediterranean climate moderates ripening and allows the natural freshness of the fruit to be preserved.

The vines grow on soils with good drainage capacity, which enhances the aromatic concentration and structural tension of the base wine. Harvesting is carried out manually at the optimal moment of ripeness, aiming to preserve the delicacy of the fruit before it enters the winery.

In the winery, the grapes are gently pressed to extract only the cleanest must, avoiding colour extraction, and the base wine ferments at a controlled temperature to preserve its fruity expression. Subsequently, a second fermentation takes place in the bottle following the traditional method, where the wine rests in contact with its lees for a prolonged period, imparting texture, finesse, and aromatic complexity.
