About Codorníu Non Plus Ultra Brut Reserva

Josep Raventós applied his expertise in sparkling wines in 1872. He employed the traditional production method, where the second fermentation occurs within the bottle. Utilising this technique alongside the most advanced technology of the time, a few years later, in 1897, Codorníu Non Plus Ultra Brut Reserva was born, the cava with the longest history in Spain. 
 
The macabeo, xarel·lo, and parellada are the three grape varieties cultivated in Codorníu's vineyards within the DO Cava that bring this dry sparkling wine to life, combining elegance and distinction. It is worth noting that at this stage of production, still in the vineyard, the grapes are meticulously selected, adhering to sustainable viticulture guidelines. In the case of Codorníu Non Plus Ultra Brut Reserva, this sparkling wine also boasts being one of the first organic and ecological sparkling wines on the market. 
 
Nevertheless, the true hallmark of Codorníu Non Plus Ultra Brut Reserva is its production method, following the traditional method, where the bubbles are achieved through a second fermentation in the bottle. For this purpose, the grapes for Codorníu Non Plus Ultra Brut Reserva are harvested and taken to the winery where they are pressed to extract the must. This grape juice is transferred to stainless steel tanks where Codorníu Non Plus Ultra Brut Reserva ferments and transforms into what is known as base wine. This wine is bottled and, after the addition of the liqueur de tirage (a blend of wine, yeast, and sugar), it undergoes a second fermentation where the carbon dioxide is trapped within the vessel. Alongside it, the yeast will also remain, which will die once their work is done. This is known as lees, and Codorníu Non Plus Ultra Brut Reserva will remain in contact with them for a minimum of 18 months before being disgorged. This final operation, carried out just before it is released for sale, involves the removal of these sediments that settle in the neck of the bottle.
