Compañía de Vinos Telmo Rodríguez is born from the collaboration between two oenologists, Pablo Eguzkiza and Telmo Rodríguez, with a vast experience in Burgundy and La Rioja.
This "company" makes wines in several Spanish denominations of origin (Málaga, Alicante, Rioja, Rueda, Ribera del Duero, Toro...). In all the areas where it produces wines, the winery always tries to use the local varieties of each region.
As Caborcas is a wine made mainly with Mencía, in addition to Sousón, Grenache, Merenzao, Godello and Brancellao. All the grapes come from a single vineyard of 2.5 hectares that is over 80 years old. It is located at 600 metres above sea level, on the hillside of the river Bibei, on granitic soils.
The harvest is carried out manually, with grape selection in the vineyard. When they arrive at the winery, the grapes are destemmed and macerated in cold before they start the fermentation, which is carried out with native yeasts, in stainless steel deposits at a controlled temperature and in wooden vats. When the fermentation has finished, the wine is aged for 12 months in 2000-litre foudres.
