About Bila-Haut Chrysopée

Chrysopée, a word derived from the Greek chrysos (gold) and poiein (to make or create), is an ancient alchemical term that literally means "the creation of gold" or "transmutation into gold." However, it is not merely a chemical or magical process; in classical alchemy, chrysopée also symbolizes inner transformation, the purification of the soul, and the quest for perfection.

This profound and mystical concept finds its resonance today in the world of wine, particularly in a special place: the Valle de Agly, at the heart of Roussillon (France). Here, the land is a mosaic of stony terraces with a rich geological background that, combined with the Mediterranean climate, becomes a unique terroir where man has learned to cultivate with respect and dedication.

The winemaker Michel Chapoutier, an emblematic figure in biodynamic viticulture, was captivated by this land. In its soils of black and brown schist, he imparts a sunny and warm touch to his wines; the gneiss provides minerality and freshness; while the combination of limestone and chalk ensures strength and balance. It is this magical blend of elements that brings his wine Bila-Haut Chrysopée to life.

Bila-Haut Chrysopée, a single-vineyard red, is a true expression of the terroir. Its varietal composition combines the elegance of Grenache Noir and the structure of Mourvèdre. The grapes grow on Cambrian mica-schist terraces in the "lieu-dit" Taillelauque, overlooking the sea, which seems to inspire each cluster. The cultivation is organic with biodynamic treatments, the harvest is manual, attending to every detail, and the ageing is divided between 70% in concrete vats, preserving purity and freshness, and 30% in demi-muids barrels for 15 to 18 months, to impart structure and complexity.

The result is a wine with a spicy profile, silky tannins, and a delicate purity that make Bila-Haut Chrysopée a truly exemplary representative of the remarkable AOP Collioure appellation.
