Exploring Recaredo with Ton Mata

Generation after generation, Recaredo has upheld their unique approach: manual disgorgement, cork stoppers, and high-quality brut nature. It is a tribute to their origins, when Ton Mata's grandfather decided to trade bricks for bubbles and became an expert in the art of manual disgorgement.

The first thing that strikes you upon arriving at Recaredo is the discovery of a historic winery that continues to thrive in the very heart of Sant Sadurní d’Anoia (Penedès). In an era when most wineries have relocated to the outskirts for more space and convenience, Recaredo remains steadfast within the urban core. It may not be the easiest or most comfortable choice, but it is the best way to honour its roots and keep the town's memory alive.


Today, that essence permeates every corner of the winery. It is a charming project where modernity and tradition coexist with impeccable taste. However, it soon becomes clear that the true driving force behind Recaredo is Ton Mata. His eyes gleam with the excitement of crafting the first Mediterranean sparkling wines of terroir. Cartesian by training and humanist by action, he has turned his work into a vital project shared with his team. Disciplined, modest, and deeply proud of his heritage, Ton has transformed Recaredo into a living laboratory where tradition and innovation engage in daily dialogue.

From Aeronautics to Terroir

Ton's path to wine was not straightforward. After an initiatory journey far from home, he discovered that everything valuable he sought was already at home. He studied aeronautics in Madrid but soon realised he did not fit the engineer profile and decided to reconnect with his roots. He immersed himself in oenology, learning viticulture and sharing experiences with those who are now industry leaders.


Before managing the winery, he harvested with his own hands, soaking up life in the vineyard. As he says, “You have to start from the bottom.” For Ton, understanding the calcareous white stones of Serral del Vell, one of his most emblematic plots, is as important as interpreting the cycle of the stars. Every element of the terroir, from the soil to the sky, is reflected in his wines.

A Third Generation Transforming the Legacy

Touring the winery is a journey through Recaredo's history. Ton's grandfather laid the foundations, his father and uncle elevated viticulture to another level, and Ton, along with his cousins, has made a qualitative leap defining the third generation. After more than 20 years of constant work, the family has succeeded in fermenting solely with their own yeasts, eliminating cane sugar, and committing to the authenticity of each plot.


From this philosophy emerges Turó d’en Mota, the first single-plot and single-varietal xarel·lo sparkling wine from Penedès, a wine that captures the essence of the terroir and the vineyard's personality in every bottle. It reflects Ton's obsession with ensuring that Mediterranean sparkling wine is a true wine of terroir, faithful to its soil, climate, and tradition. And indeed, he has achieved this with great success.

From Science to Conscience: Biodynamics at Heart

Ton approached biodynamics from a technical rigor —“for a Cartesian, it was easier”— but over the years, he has turned it into applied humanism. For him, biodynamics is not just agriculture: it is how teams are organised, how work is done with awareness in every task, and how the life cycle of the vineyard and people is respected.


“Pruning with the vision of the wine to come is not the same as pruning without awareness; that small difference changes everything,” he tells us with conviction. It is a demanding path that requires patience, but with each passing year, progress is evident. And it is clear how Ton instills this philosophy in everyone who works alongside him.

Corpinnat: A Project Strengthening Penedès

One of Recaredo's significant milestones is its key role in the creation of Corpinnat, the European collective brand that has redefined Penedès sparkling wine. It was born as a response to the limitations of the DO Cava, which did not recognise the diversity of origins or vinification on the estate.


“Corpinnat is not just a brand; it is a social project that unites and strengthens a region still suffering from low grape prices. It is not against anyone; it is in favour of viticulture, terroir, and the people who work the land,” Ton explains passionately. His dream, as ambitious as it is steadfast, is for a wine lover in New York to associate Corpinnat with the same grandeur as Champagne.


Looking back, one realises that entering Recaredo, touring its winery, and spending time with Ton is to discover that behind every bottle, there is effort, enthusiasm, and a dream fulfilled. And if that moment is accompanied by a glass of Serral del Vell, the experience becomes complete and reminds us that the authentic —made with passion and respect— always leaves a mark.
