About Bodegas Luis Pérez La Escribana Vino de Pasto

In the south of Andalucía, 17 kilometres from the Atlantic Ocean, lie the purest albariza soils of the Jerez region. No weeds. No unwanted plants. Only the finest palomino vines. The Arabs, although not significant alcohol consumers in Al-Andalus, were the first to recognise this uniqueness (at least the pioneers in naming it); they did not hesitate to call this land Machar-Nudo, which translates to Bare Hill. Today, several centuries later, Macharnudo remains one of the great Andalusian vineyards. Here, Bodegas Luis Pérez La Escribana Vino de Pasto is born. 
 
The oenologist and viticulturist Willy Pérez—a true wine enthusiast—is behind this wine, which stands as a leading reference in the revival of "vinos de pasto." These wines, which have been resurrected over recent years, are rooted in the tradition of biological aging without any fortification (no additional wine alcohol is added). This results in wines with a natural alcohol content that have once again become the focus of attention. Part of this revival has been driven by Willy Pérez and Territorio Albariza, the collective he is part of, along with other producers such as Callejuela, Collantes, Cota 45, Forlong, M. Ant De la Riva, and Muchada-Léclapart, advocating for the revival of the most traditional winemaking methods. 
 
As its name suggests, Bodegas Luis Pérez La Escribana Vino de Pasto thrives in the vineyard of the same name, La Escribana and San Cayetano (both annexed), at about 100 metres above sea level and facing southwest. In this area, the albariza soil is predominant, but with a striking component of toscas de barajuela (which allows for the production of wines destined for long aging in this plot). The old vines, over 30 years old, are pruned using the traditional vara y pulgar system, and are tended and nurtured until the clusters reach optimal ripeness. A green harvest is conducted beforehand to reduce production and obtain a wine with low alcohol content and high acidity (used to balance the final wine). As for the remaining clusters, they are picked at their optimal moment, collected manually in 14-kilogram boxes. At the winery, Bodegas Luis Pérez La Escribana Vino de Pasto ferments in stainless steel tanks at low temperatures and finally undergoes approximately a year of biological aging in Jerez casks, where it remains in contact with its lees.
