About Bufadors Les Voranes Brut Nature

A long-aged sparkling wine from the Penedès with no added sulphur and approaching excellence? Thanks to Ton Mata, Recaredo’s CEO and president of Corpinnat, we can say yes to that offer. This intrepid winemaker, hooked on biodynamics, has finally made his dream come true in the project he set up with his wife Encarna Castillo. This couple met 20 years ago while doing an internship in Champagne and now they share their knowledge and passion under the name Bufadors.

It was in their search for a purist relationship with the terroir that Bufadors Les Voranes Brut Nature was born, a sparkling wine made with the Xarel·lo and Macabeo varieties from vineyards with moderately calcareous soil and a clay-loam texture. They work biodynamically, respecting the plant and the terroir as much as possible, and once the grapes reach optimum ripeness, they are harvested by hand. The wine is vinified in the winery following the traditional method. A first fermentation in stainless steel tanks with native yeasts and a second fermentation in the bottle with the wine’s own must. This means there are no added elements; no sugar, no commercial yeasts, no clarifying agents, no sulphites. It is then left to settle on its lees with a natural cork stopper for 31 months. Finally, disgorging is done manually, without freezing.

With Bufadors Les Voranes Brut Nature, Ton and Encarna have reached their goal of showcasing the natural virtues of a terroir.
