About Bufadors Vinya del Rascarà Brut Nature

When Tom Mata, third generation of the Recaredo winery and president of Corpinnat, decided to set up a new personal project with his wife Encarna Castillo, he did so with a purpose that goes beyond money making. A risky, innovative and creative approach that stems from the restlessness of its leaders where, with a very limited production, they have made their dream come true; creating a high-end natural sparkling wine aged for 5 years.

To do this, they work under the name Bufadors and are part of the Corpinnat collective brand, cultivating a 3-hectare plot of clay-limestone soil planted in 1999. These are Xarel·lo vines located in Sant Sadurní d'Anoia (Penedès) and grown organically using biodynamic treatments that keep the intrinsic qualities of the vineyard intact. When the grapes reach optimum ripeness, they are harvested and selected by hand ready for vinification. Following the Champenoise method, the base wine is fermented with native yeasts in stainless steel tanks and the second fermentation in the bottle is carried out with overripe grape must from the same vineyard. No sulphur or other oenological additives are used and the wine is aged on its lees for 5 years in the cellar. Finally, disgorgement is carried out in the old style, i.e., by hand.

Rare and delicious, Bufadors Vinya del Rascarà Brut Nature reflects a work philosophy that spares no time, commitment or dedication. The expertise of one of the great sparkling wines producers using the champenoise method, who has understood how to defend his land and honour his origins better than anyone, and who now highlights this in his most personal project.

2017

Bufadors Vinya del Rascarà Brut Nature 2017 is a complex sparkling wine of which there are only 2,185 bottles. It has a fine bouquet of white fruit and citrus accompanied by saline notes. On the palate it is crisp, precise and elegant. A very pure Corpinnat with a silky texture and a long, mineral finish.
