This is the belief of Camille and Guillaume Boillot, who have made this philosophy an indelible signature in every bottle they produce.

The story of this young winery is the union of two lineages deeply rooted in Burgundy, yet infused with the freshness of their own vision. Since 2019, Guillaume and Camille have forged an independent project that honours the tradition inherited from their families, yet dares to interpret it with modern sensibility and minimal intervention. Their hands and their vision are present at every stage: from harvest to bottling, always with the aim of capturing the vineyard's most honest essence.

Camille & Guillaume Boillot Puligny-Montrachet 1er Cru "Le Cailleret” is a chardonnay of undeniable nobility, hailing from a privileged plot just a stone's throw from Montrachet (Burgundy, France). Its clay-limestone soils, scattered with white pebbles, impart a precise and vibrant minerality. Here, harvesting is done by hand, with a rigorous selection of clusters. The must is obtained through slow vertical pressing of whole clusters, followed by 15 months of ageing in new 420-litre barrels. The result is a white wine with a silky texture, elegant tension, and aromatic depth, where ripe fruit and hazelnut notes blend with an unmistakable saline echo.

Very few bottles are produced, making each one a gesture of exclusivity and elegance. Served at an intimate table, accompanying exquisite seafood, noble fish, or simply enjoyed in quiet contemplation, this wine is an experience that transcends the glass: a dialogue between the land, time, and the vision of two artisans who have found harmony in purity.
