About Cos Pés

“Cos Pés” translates literally to “with the feet” or “on foot” in Galician, and it alludes to one of the most ancient methods of winemaking: grape treading. An age-old, almost ritualistic gesture, where the gentle pressure of feet replaces machinery to initiate the natural transformation of grapes into wine.

And naturally, when such an idea emerges, the question almost answers itself: who better to bring it to fruition than two of the most esteemed names in Spanish wine?

On one hand, the oenologist Raúl Pérez, a leading figure in contemporary Spanish wine. On the other, Rodrigo Méndez, a key figure in the Val do Salnés and one of those responsible for the revival of this Galician region. When both collaborate on a project, convention is usually left out of the equation… and Cos Pés is no exception.

The wine is crafted in Galicia, at the Forjas del Salnés winery, located in Cambados (Pontevedra). A family-run winery with very limited production, working closely with the vineyard and adhering to a clear philosophy of minimal intervention to allow the wine to express itself freely.

Cos Pés is made entirely from albariño, sourced from a single vineyard of old vines, aged between 40 and 50 years, planted on sandy and gravelly soils, very close to the Atlantic Ocean. This proximity to the sea imparts salinity, tension, freshness, and a vibrant energy that courses through the wine from start to finish. 

The process begins with manual harvesting and a rigorous selection of grapes in the vineyard itself. But the pivotal moment arrives in the winery, when the grapes are gently trodden by foot, thus commencing fermentation in a traditional manner. There is no ornamental gesture here, but a deliberate oenological decision to extract just enough, respect the integrity of the fruit, and initiate the process with an almost instinctive sensitivity.

Subsequently, the wine evolves with a maceration on lees in used oak foudres for 12 months, a patient endeavour that imparts texture, depth, and complexity without losing freshness or varietal character.

Cos Pés is not a nostalgic exercise nor a romantic recreation of the past. Rather, it is a way of returning to the essentials with a contemporary perspective. A wine that does not deny tradition but sees it as a living tool to further refine the expression of the landscape.

And it is precisely in this balance between ancient gestures and modern precision where Cos Pés finds its identity. An albariño that literally begins with the feet… and ends up reaching great heights.

2013 Good entry, silky and thick. Very mineral with saline memories. Well balanced acidity. Very nice.
