One of the most prominent appellations in Sicily is undoubtedly Cerasuolo di Vittoria. This designation, situated in the Ragusa region, has earned a place of distinction in the wine world thanks to the endeavour of three intrepid friends (Giambattista Cilia, Giusto Occhipinti, and Cirino Strano), who united in 1980 with a common purpose: to recreate the wines of their ancestors. Under the acronym COS, formed from the initials of their surnames, this project is notable for its pioneering approach to biodynamic agriculture and the use of amphorae for vinification. The result is wines that eschew fleeting trends and commercial logic, rooted in the authentic essence of Sicilian lands.
A fine example of this endeavour is found in COS Rami Insolia e Grillo. An orange wine crafted from the indigenous varieties grillo and inzolia. Vines located in the municipality of Vittoria, on clay and limestone soils, cultivated organically with biodynamic treatments. In the winery, the grapes are carefully destemmed and pressed to initiate fermentation with native yeasts and a 7-day maceration with their skins. Afterwards, the wine is aged for 7 months in concrete tanks.
Exhibiting a pure expression of the grapes and the soil, without external interferences, COS Rami Insolia e Grillo not only represents innovation but also respect for traditions and terroir. An authentic reference of the new generation of Sicilian winemaking.
