About COS Vittoria Delle Fontane

In 1980, three young friends and visionaries—Giambattista Cilia, Giusto Occhipinti, and Cirino Strano—resolved to revolutionise winemaking in Sicilia forever. Their passion and collaboration gave birth to Azienda Agricola COS, a name derived from the acronym of their surnames.

From the outset, COS aimed to break the mould. They were pioneers in the DO Cerasuolo di Vittoria, utilising amphorae and practising chemical-free viticulture, honouring the land and the grape's authenticity. Their utopian vision transformed into history, and today COS wines are indisputable benchmarks of Sicilian viticulture.

One of their most iconic wines is COS Vittoria Delle Fontane, originating from vineyards over 20 years old, situated at an altitude of 200 metres on clay-limestone soils. Each plot is vinified separately to create their first estate Cerasuolo di Vittoria Classico, blending frappato and nero d’Avola. Fermentation occurs in concrete, with 20 to 25 days of skin contact, before being transferred to large Slavonian oak barrels, where the wine matures for 2 years. It then completes its ageing in amphorae for 6 months to a year, before being bottled and allowed to evolve in the bottle until it reaches its full potential.

COS does not pursue immediacy. Vittoria Delle Fontane is released to the market only when it is ready to narrate the true story of the land, the grape, and patience. This wine is Sicilia in its purest form.
