About Cuevas de Arom Os Cantals

Cuevas de Arom (Mora spelled backwards) is the project by Fernando Mora from Bodegas Frontonio and Bodegas San Alejandro, who, inspired by the caves where wine was traditionally made, vinify old Garnacha grapes using traditional methods and aiming for an elegant and fresh profile.

Os Cantals is made from Garnacha grapes sourced from mountain vineyards planted in 1935 in the municipality of Murero. A total of 2.2 hectares of slate, sandstone, and quartzite soils located at an altitude of 800 meters above sea level, where sustainable agriculture practices are employed.

After manual harvesting, the grapes are cooled for 48 hours. After this time, they are destemmed and fermented in 600-liter oak foudres with native yeasts. Once fermentation is complete, the wine is transferred to new oak barrels for malolactic fermentation and aged for 10 to 12 months.

This collaboration between two great wineries from Aragon results in Os Cantals, a high-end Garnacha wine brimming with freshness and precision.

2015 Os Cantals is a concentrated, balanced and fresh wine. On the nose, the aromas of fresh red fruit stand out, with notes of fennel and subtle spices. In the mouth, it is intense, concentrated and with a lot of character. A wine with a long life ahead.
