About Davide Observador
At Davide, one of the oldest wineries in the Rías Baixas (founded in 1902 by the family Acha), they practice reflective viticulture. This concept, coined by the winery itself, signifies "a unique way of working, understanding, and respecting the vineyard" that involves "pausing and observing." In keeping with this philosophy, rooted in meditation and thorough analysis, the wine could be named nothing other than Davide Observador.
From the Ofelia estate (in Bailón) comes this unfiltered blend of albariño and godello, aged on its lees. Given the outstanding results, the current owner David Acha and the winemaker Pablo Estévez have had to make a significant effort to fully understand the poor, granitic soils prevalent in this northwestern region of Spain. Their excellent drainage capacity is what makes this base so special for the vineyards of the Valle del Salnés. It is well known that albariño takes a bit longer to mature; however, this will not be an issue for Davide Observador.
Completely natural, and without any additives, both the cultivation and production of Davide Observador have been carried out in the simplest way possible. Initially, the varieties are vinified and worked separately, fermenting in different stainless steel tanks. The grapes will be processed whole, without destemming, and the pressings will be gentle without applying strong pressures. For nine months, Davide Observador will remain unfiltered and unstabilised until the time comes for static cold stabilisation. From here, with a much clearer and brighter appearance, Davide Observador will be bottled and allowed to rest for another two months in the winery before being released for sale.
As the Nobel Prize-winning physician Alexis Carrel once said, "A few observations and many theories lead to error. Many observations and few theories lead to truth." And in the case of Davide wineries, thanks to the white Davide Observador, they have fully achieved it.
| 2022 | Davide Observador 2022 is an aromatic, delicate and very seductive white wine. In general, it is a powerful wine, both on the nose and on the palate, with floral and fruity aromas. Bright, golden yellow in colour with steely reflections. The nose is elegant and delicate, with citrus and tropical touches. The palate is fresh and tasty, with volume and some sweetness. Very intense, with bitter and mineral notes. Long and persistent finish. |
