About De Moor L'Humeur du Temps

De Moor L’Humeur du Temps is a single-varietal Chardonnay white wine produced by Domaine Alice & Olivier De Moor in the A.O.C Chablis, in Burgundy, France.

The grapes used to make the De Moor L’Humeur du Temps wine come from a roughly one hectare, 25-year-old plot lying on limestone soils that provide it with all the common characteristics of a Chablis: finesse, elegance and persistence.

The harvest is carried out manually and the must ferments with its native yeasts. The wine ages in 228 and 500 litre barrels for twelve months. When this time has passed, the final coupage takes place and the resulting wine is bottled using gravity and without clarifying or filtering.

Alice and Olivier De Moor set up their Domaine in the early 1990s in Yonne, in southwest Chablis. They have around 7 hectares in the municipalities of Chitry, Saint-Bris-le-Vineux and Courgis, which they cultivate according to the principles of biodynamic agriculture. They make their wines in a way that always respects the land and the vine.

De Moor L’Humeur du Temps is a biodynamic wine that Alice and Olivier make with care and love. One of the most sought after, sell out Chablis wines thanks to its purity and natural personality.
