She was a dancer. He hailed from the world of glassmaking. Together, they have established Domaine Bobinet, one of the most promising wineries in the Loire Valley.

From the village of Beaulieu, in the Saumur region, Emeline and Sébastien have for years been committed to producing natural wines, cultivated using biodynamic methods. And rest assured, they have learned from the best: Olivier Cousin, Pontonnier... The foundations were already in place (indeed, Sébastien is the seventh generation of a family of winegrowers); it was simply a matter of refining the innate talent. And the outcome has been nothing short of exceptional.

Domaine Bobinet Poil de Lievre is a spectacular white wine. It is one of the finest chenin blancs you could encounter. Entirely natural and biodynamic, its four months of aging in wood and concrete make it a truly special wine that we assure you will be unforgettable.

Domaine Bobinet Poil de Lievre originates from the 0.3 hectares of chenin blanc that Sébastien cultivates on the banks of the Saumur river. In this locale, in the northwest of France, the soils are primarily composed of tuffeau, a distinctive white limestone known for its moisture retention and ability to create deep water reserves that assist the vines during hot spells. The maritime climate, characterized by sparse rainfall and high temperatures, is typical in the A.O.C. Saumur-Champigny. And the tuffeau is the best ally to cope with these conditions. However, the virtues of this stone do not end there, as it also plays a crucial role in the aging of the wines.

Typically, in the A.O.C. Saumur-Champigny, the cellars where the bottles are left to age are carved right into this stone, ensuring a constant temperature and humidity during the wines' maturation. And Domaine Bobinet Poil de Lievre is no exception. Following the manual harvest in small crates, Domaine Bobinet Poil de Lievre is swiftly taken to the winery where it is directly pressed. The juice obtained is transferred to fermentation tanks, where Domaine Bobinet Poil de Lievre will also undergo malolactic fermentation. Finally, after four months of aging in wood and concrete, Domaine Bobinet Poil de Lievre will be ready to be savored.
