This has a significant influence on the behaviour and social, physical, emotional and intellectual development of each person. Similarly, the same strain can have a thousand and one variants depending on a large number of factors. The terroir, the climate, the treatments used, etc. As Dominique Cornin, a winemaker located in the southernmost part of Burgundy, puts it, “Our wines are like children in a family. All made with Chardonnay grapes but each one has its own personality. They are like you, like me. Sometimes reserved or shy, sometimes seductive, cheerful or smiling, they evolve and mature but stay honest. They are authentic, in a word, alive.”
A family winery located in Chaintré (AOC Mâcon-Chaintré), Dominique Cornin Mâcon Chaintré Les Serreuxdières is a wine made from old Chardonnay vines by constantly listening to the vineyard and intervening as little as possible. The grapes are harvested by hand and in the winery, after destemming and gentle pressing, the must is fermented in thermoregulated vats with native yeasts. The wine is then aged in stainless steel tanks for approximately 12 months on fine lees. Finally the wine is bottled without clarifying and with a light filtration.
