From one of the most avant-garde wineries in the D.O. Rueda—where experimentation with materials is a constant—comes the most classic Verdejo: El Lagar de Moha Sapientia Verdejo Ecológico.
From El Lagar de Moha, the first winery in the appellation certified as organic, comes this young, organic, and vegan white wine that embodies the purest expression of northwestern Spain. In this region, with a rich wine-making tradition, the soils are predominantly gravelly, low in organic matter, with a limestone and clay subsoil. While the upper layer allows for easy water drainage, the lower layer retains precipitation, becoming a substantial reservoir that is particularly beneficial during the hot, dry summer months. In this regard, and considering the challenges of working the land without the aid of chemical products, the remarkable efforts of its proprietors, Alberto Moro and Ángeles Ortega, must be highlighted. All tasks are performed manually, including the harvest, and the vineyards (spread between Rueda and Nava del Rey) are cultivated organically.
The other half of El Lagar de Moha Sapientia Verdejo Ecológico is crafted in the winery, with spontaneous fermentations initiated by indigenous yeasts, already present on the grape skins. This detail imparts El Lagar de Moha Sapientia Verdejo Ecológico with a unique character, rendering it a one-of-a-kind wine globally. Finally, after a brief aging on fine lees, El Lagar de Moha Sapientia Verdejo Ecológico is bottled following a slight bentonite filtration.
