Finca Olviardots Vermell is a red wine from the D.O. Empordà produced by the Vinyes d’Olivardots. This wine is a blend of four different grape varieties: Syrah (60%), Garnacha (15%), Cabernet Sauvignon (15%) and Cariñena (10%).
The grapes used for Finca Olivardots Vermell are predominantly quite young, between 10 and 15 years old, with the exception of the Cariñena variety, which comes from old vines. The vines grow in the flattest area of the region, home to alluvial soils composed of cobbles, sand and granite. The harvest is carried out manually, with the grapes selected first at the vineyard. After being transported to the winery, the grapes again pass through a selection table. Subsequently cold maceration is carried out at 4ºC, fermentation at 26ºC, during which each plot is separately vinified, during which are made with vertical press pressed at very low pressure.
Finca Olivardots Vermell is aged for ten months in second and third use fine grained French oak barrels for 10 months. The wine is then bottled without being clarified and filtered.
Situated in the town of Capmany, close to Girona, Vinyes d’Olivardots is a small winery that produces all of its products organically. The winery is home to four hectares of vineyards. The married couple Carme Casacuberta and Antoni Pena have been at the helm of the project for over a decade.
