Now, in the 21st century, this quality has been diligently pursued at bodegas Torremilanos in the creation of Finca Torremilanos El Porrón de Lara, a single-variety tempranillo, aged for 11 months, from the D.O Ribera del Duero, located south of Burgos.
The genesis of Finca Torremilanos El Porrón de Lara lies within the Torremilanos estate, specifically in the east-facing plots situated at an altitude of 800-900 meters. The continental Mediterranean climate—with its harsh, wet winters and dry summers—along with organic and biodynamic cultivation, contribute to its character.
However, the essence of Finca Torremilanos El Porrón de Lara is rooted in the art of awaiting precise moments of maturation. The first of these is in early September, which yields a fresher grape; the second in October, when the berries attain a higher alcohol content and sweetness.
Upon arrival at the winery, the journey of Finca Torremilano El Porrón de Lara diverges onto separate paths. The first harvest undergoes a pre-fermentative maceration of five days. For the second, this extends to eight days. After separate malolactic fermentations, both are unified in February and continue their sojourn together in oak barrels and concrete vats where they will rest for 11 months. Ultimately, Finca Torremilano El Porrón de Lara will be naturally bottled, unfiltered and unfined, without the addition of sulfites.
