On certain evenings, the estate of Trujillo seems to fall into silence prematurely. The heat has gradually dissipated, yet the earth still harbours its warmth. In that moment, almost without warning, one begins to comprehend why each edition of Habla is unique, why none resemble their predecessors, and why some wines are born with the sense that they will never be replicated.

Habla Nº37 embodies this notion. It belongs to a collection of numbers that form not a series, but a succession of unrepeatable moments. Each emerges from a specific harvest, from a climate that will not recur in the same way the following year, from land that always responds differently even when listened to with the same attention.

On the estate of Trujillo (Cáceres), in the heart of Extremadura, the bodega Habla cultivates a vast, open landscape where the light seems in no hurry to depart. It's a dry environment, with expansive horizons, where the vine learns to coexist with water scarcity and a pronounced thermal amplitude between day and night. This temperature variation is not a minor technical detail: it allows the grape to mature intensely during the day and retain freshness as night falls.

The wine is born within the VT Extremadura, a land that does not soften nature's character but allows it to appear as it is: sun-drenched, direct, and concentrated.

The vineyard stretches across plots that face the sun from various angles. It is not a uniform terrain, and therein lies part of its identity. The soils are poor, with good drainage, compelling the vine to delve deep to find balance. This silent struggle later translates into wines with greater definition and tension.

The vineyard is cultivated organically, respecting the plant's rhythms and allowing the environment to guide part of the journey. It's not about intervening more, but observing better.

In this landscape, Habla Nº37 is crafted from Malbec, a non-native variety that finds a different interpretation here. Accustomed to other climates, in Extremadura it expresses itself under more intense light and more apparent drought. This adaptation alters its ripening process: the fruit concentrates, the skin gains prominence, and the wine acquires a more direct personality, without losing the freshness imparted by cooler nights.

In the winery, the harvest is conducted manually, with each cluster carefully selected. Then, the grapes are destemmed, separating the stalk to work solely with the berry. A cold maceration is performed, a gentle contact between the must and the skins to extract colour and aroma without aggression.

Alcoholic fermentation occurs in stainless steel tanks with controlled temperature, where the yeasts slowly and precisely transform the grape's sugar into alcohol, respecting the Malbec's fruity character. Later, the wine undergoes malolactic fermentation, a natural process that softens acidity and rounds out the texture.

Subsequently, Habla Nº37 is aged for 12 months in oak barrels, a period of rest that refines the wine, integrates nuances, and adds complexity without erasing its varietal identity.

Bottling follows, as a quiet conclusion to a process that has gradually taken shape, unhurriedly.
