About Legaris Páramos de Legaris
When we mention a Páramo, we are talking about a large expanse of flat, bare land at high altitude, often over 1000 m above sea level. These are the unique characteristics that Legaris, the Codorníu Raventós group winery in the municipality of Curiel de Duero, in the Ribera del Duero, dares to produce high-altitude wines within, always championing the value of origin. These are not areas where vineyards were historically cultivated, but over time the benefits of their properties have been discovered. So, as well as their traditional Roble, Crianza and Reserva ranges, new wines like this Legaris Páramos de Legaris convey their commitment to the authenticity of a unique terroir and the varietal character of the Tinto Fino.
Made from vineyards of the D.O. Ribera del Duero’s native variety, Tinto Fino, Legaris Páramos de Legaris starts life in the stony moors in the villages of Moradillo de Roa, Peñafiel and Pesquera de Duero at an altitude of 900 metres. Traditional agriculture is practiced by limiting yields to achieve the best concentration of grapes and, once they reach optimum ripeness, they are harvested and quickly taken to the winery to keep their qualities in tact. After selecting and destemming, the grapes undergo a cold pre-fermentation maceration (10ºC) for 3-4 days and fermentation begins naturally with native yeasts at controlled temperatures. Finally, the wine is aged in French and American oak barrels for an average of 11 months before bottling.
