Legaris Sauvignon Blanc 2025 boasts a brilliant straw-yellow hue with subtle greenish reflections that pique one's curiosity. About Legaris Sauvignon Blanc
The Rueda Denomination of Origin, with a production area that spreads across the provinces of Valladolid, Segovia and Ávila (Castilla y León), is mainly known for the quality of its white wines. The Verdejo grape is the region’s star white variety, but it is not the only one. The truth is that Sauvignon Blanc is becoming more and more important every day. A variety originating in the French Loire region that made its appearance in the 1970s and has adapted perfectly to the stony soils that are rich in calcium and magnesium and to central Spain’s continental climate. Legaris, the winery run by the Codorníu Raventós group in the municipality of Curiel de Duero, in Valladolid, has a good command of this grape and this is clear to see in their single-variety Legaris Sauvignon Blanc.
With more than 93 hectares of their own vineyards and an additional 200 hectares from suppliers, Legaris has vineyards planted from 1999, the year the winery was founded. This is where they grow the raw material to make Legaris Sauvignon Blanc. A white wine made from Sauvignon Blanc grapes grown at an average altitude of 750 metres above sea level. The soils are characterised by being poor and stony with good aeration and drainage. The grapes are harvested mechanically at night to avoid the high daytime temperatures and preserve the quality of the must. Once in the winery, the grapes are destemmed and undergo cold skin-contact maceration for 4 hours at 6ºC. It is then pressed and the resulting must ferments in stainless steel tanks at a low temperature. Finally, the wine remains on its own fine lees for 3 months until clarifying and bottling.
The result is Legaris Sauvignon Blanc, a wine with a marked varietal character, an outstanding aromatic intensity and an easy and refreshing mid-palate. A very good example to show that the D.O. Rueda is not just about the Verdejo variety.
