About Celler Del Roure Les Danses Blanc Mandó

Les Danses is an organic sparkling wine crafted using the ancestral method with the indigenous mandó grape, brought to you by Celler del Roure in the D.O. Valencia.
 
Celler del Roure is a family-owned winery established in 1996 in Moixent, in the Les Alcusses valley, with the ambition to produce exceptional aged red wines. Managed by Pablo Calatayud, an agronomist who is a strong advocate for the region's indigenous varieties such as mandó and monastrell, the winery has adeptly captured the essence of the area with fresh, light, and low-alcohol wines.
 
Les Danses originates from vines aged between 20 and 40 years, planted in limestone and clay soils. These vines are situated at 600 metres above sea level and are cultivated under organic certification. No chemical products are used, and all treatments are organic and environmentally friendly. When the grapes reach their optimal ripeness, they are hand-harvested in 15 kg boxes.
 
In the winery, the grapes for Les Danses are destemmed. Following the ancestral method, they first ferment with native yeasts in stainless steel tanks and, before completing fermentation, are bottled to finish the process. Finally, they remain on the lees for a minimum of 20 months.
 
Les Danses is the first sparkling wine produced by the Valencian winery Celler del Roure. A rosé crafted using the ancestral method, it is fresh, light, and highly expressive.
