About Cap de Pardals Ancestral

With each passing day, more and more wine enthusiasts believe that returning to one's roots does not equate to having one's head in the clouds. Under this philosophy, Ramon Jané Viticultor introduces Cap de Pardals Ancestral (in Catalan "head of birds"), a sparkling rosé crafted using the ancestral method with the endangered mandó grape variety in the heart of Penedès (Catalonia).

Ramon Jané Viticultor aims to cultivate his grandparents' vineyards in the same manner they did, striving to produce wines that are a true reflection of the landscape that nurtured them. To achieve this, he first focuses on reviving native grape varieties that are on the brink of extinction and works the land without chemicals, employing entirely traditional methods.

In the winery, the hand-harvested grapes are vinified according to the ancestral method. Initially, they macerate for 2 hours in the press, and after gentle pressing, they begin alcoholic fermentation with native yeasts. Before the fermentation of Cap de Pardals Ancestral is complete, it is bottled to finish fermenting in the bottle. There, it rests on its fine lees for 12 months before being released to the market.

Thanks to this ancestral method, also known as Pétillant Naturel, which, despite its antiquity, is very much in vogue, we can savour Cap de Pardals Ancestral, a natural sparkling rosé that, while not affiliated with any D.O., captures the true essence of Penedès.

2021

Mas Candí Cap de Pardals Ancestral 2021 enlivens the senses with its effervescent youthfulness. On the nose, it summons distinct aromas of red fruit coupled with a hint of citrus. Upon tasting, its understated sweetness is counterbalanced by a zesty acidity, yielding a rejuvenating sensation. Its delicate bubbles pirouette on the palate, imparting a dry aftertaste with a delightfully fruity nuance. This sparkling wine is an impeccable selection for those in pursuit of a bubbly and ethereal experience.

2019

Mas Candí Cap de Pardals Ancestral 2019 is a fruity sparkling wine made according to the ancient method with delicate aromas of white fruit, notes of wild flowers and hints of undergrowth. On the palate it is dry, effervescent and light. A low-alcohol pet-nat with a subtle funky touch that will make you want to go back for more.
