About Mascorrubí Aixart

His name is instantly linked with the realms of technology and connectivity. Ernest Pérez-Mas is the chairman and founder of Parlem Telecom, the Catalan operator that champions a model rooted in proximity and commitment to the region. Yet, the same spirit of connectivity that drives his company extends beyond the digital realm. For several years, Ernest has also sought to connect with the land, and he has done so with genuine passion.

In 2013, he took a bold and rather unusual step. He acquired vineyards in the Pla de Manlleu, a high-altitude area of Penedès (Catalonia), with significant potential for crafting unique wines. “I seek authenticity, proximity, and differentiation,” he declares. Thus, Mascorrubí was born, a wine project committed to organic farming, respect for the environment, and the revival of native varieties such as montònega (a type of parellada) and sumoll.

Among the gems produced on this estate is Mascorrubí Aixart, a single-varietal garnacha blanca sourced from vineyards situated over 500 metres above sea level, on clay-limestone soils that contribute freshness, tension, and structure to the wine. The cultivation is entirely organic, and the harvest is conducted manually, with meticulous selection of each bunch.

The winemaking process begins with an 8-hour pre-maceration at 15°C, allowing the must to maximise its aromatic potential. Fermentation occurs slowly and at a low temperature—never exceeding 16°C—to preserve all the freshness, subtlety, and elegance inherent to the variety. The wine is subsequently refined for four months in French oak barrels, which imparts roundness, creaminess, and a subtle yet profound complexity.

Mascorrubí Aixart is an expression of the landscape and a philosophy of wine-making. A characterful white, crafted with care and without haste, it reflects both the richness of the terroir and the vision and sensitivity of its creator.
