About Parés Baltà Absis
Unmoved, beautiful and enduring through time. This is how we might describe Romanesque churches, timeless buildings that are still in an almost perfect state in the Penedés region (like the church of Sant Ponç, in Corbera de Llobregat). And we can use the same words to describe some of the wines made in the D.O. Penedés, like Absis.
Absis is a red wine with great aging potential made by the Parés Baltá winery in the centre of the Penedés region. Its great concentration of tannins and aging potential are what inspired the name of this wine, which is as enduring as the stones that make up the apse of these churches (the semicircular area in the chancel where the altar lies).
The Parés Baltà story began in 1790, when the first vineyards were planted. Since then, this family winery has been making “high quality, organic, healthy wines that tell a story of the local traditions and customs”. At least, that is how they explain it on their website, where they tell the story of their founder, Joan Cusiné Hill, who is now succeeded by his grandsons, Joan and Josep, the third generation. In all these years Parés Baltà has been expanding its range of wines, eventually creating Absis, a red wine that comes from between the Foix Natural Park and the Garraf Massif. Right at this point lies La Torreta, one of the estate’s five plots, which is dedicated exclusively to red varieties. Here, the vines grow at an altitude of 258-388 metres above sea level on a very rich calcareous soil, full of marine fossils (which were deposited in the area when the sea covered the Penedés). The cultivation, working with a large number of varieties, is completely biodynamic and involves minimal intervention. The grapes are harvested manually and in small boxes to avoid oxidation of the must.
This great variety of grapes means they can make several different microvinifications. The varieties used to make Absis are macerated and fermented separately, at a controlled temperature of between 24ºC and 26ºC, in 400-litre French Allier oak barrels. After this, Absis will spend 18 months aging in these same barrels. A luxury that is only produced in exceptional vintages.
| 2018 | Parés Baltà Absis 2018 envelops us with its robust character and an elegant maturity. On the nose, it unfolds a spectrum of aromas with cherries and raspberries interwoven with balsamic hints and a subtle touch of oak. On the palate, its stride is vigorous, offering a rich texture that confirms its full-bodied structure. Spices come to the fore, complementing the fruit and adding a complexity that lingers in a prolonged and gratifying finish. |

| 2017 | Absis 2017 is a complex wine, with strong tannins and great acidity. The nose is concentrated, with a great aromatic complexity, with candied notes of red fruits, raisins, plums, blackberries and balsamic and oak aromas from its time in oak barrels. On the palate it is powerful, oily and broad. |

| 2003 | In the mouth shows a great power and concentration, showing fat and wide. Cherry with purple trim, black coat and high-intensity high myu. Great concentration and complexity in flavor, with notes of fruit preserved perfectly fused with the presence of wood and balsamic notes. |
