About Penfolds Bin 407 Cabernet

Max Schubert, Don Ditter, John Duval and Peter Gago are the four head winemakers who have carefully maintained the signature style of Australia’s most iconic winery; Penfolds. More than 175 years of history with each one of them adding their own touch, respecting the winemaking techniques of their predecessors. And this is where the secret of their success lies. A long guarded tradition that has allowed them to release a large number of leading wines with great success. Their philosophy is to create multi-regional blends from South Australia to achieve greater complexity and a certain continuity in every vintage.
 
One of their great wines is Penfolds Bin 407 Cabernet. First released in 1993 with the 1990 vintage, this is a blend inspired by Bin 707, a wine that holds a steady place among Australia’s finest Cabernet Sauvignons and perfectly reflects the Penfolds”house style”. Bin 407 was made from the increasing availability of high quality Cabernet Sauvignon grapes. A single-variety wine made using respectful agriculture followed by the grapes fermenting and macerating at controlled temperatures in stainless steel tanks. The wine ages in French and American oak barrels for 18 months.

The result is brilliant. So much so that in 2005 Penfolds Bin 407 Cabernet was rated a “Distinguished” wine by Langton’s, the internationally recognised classification for setting the benchmark for Australia’s best. A classic from the Penfolds label.

 

2019
Penfolds Bin 407 Cabernet 2019 unfurls a delightful allure with its mature profile and intricacy. On the nose, it beguiles with scents of blackcurrants and plums, complemented by spiced nuances reminiscent of clove. Upon tasting, this Cabernet delivers a harmonious concentration and a silky texture, culminating in a finish that lingers with finesse. It is the quintessential choice for those in pursuit of a complex and charismatic red.
 
2017

Penfolds Bin 407 Cabernet 2017 is a concentrated red wine with aromas of red fruit and violets, aniseed notes and hints of cinnamon and grated orange. On the palate it is voluminous, succulent and well structured. A wine with grainy tannins, a bright freshness and a long and persistent finish with subtle hints of green olives.
