Although there are many types of wine gurus, when someone like Robert Parker speaks, the entire world listens. To understand the Bin wines, one must first know a bit about the history behind the name. “Bin” stands for Batch Identification Number and was introduced by winemaker Max Schubert. Each Bin identifies a specific batch: its style, the type of grape, and the exact location in the winery where it was matured. Originally, the numbers referred to the location of the container, but over time some acquired their own significance. For example, Bin 8 is named because it was crafted using older oak, previously employed in containers 128, 28, and 389, with the “8” serving as the common thread of that tradition.

Today, Penfolds Bin 8 Shiraz Cabernet Sauvignon demonstrates how tradition and innovation can go hand in hand. This blend of syrah and cabernet sauvignon begins with a brief cold maceration of the grapes. The must then ferments in stainless steel tanks at controlled temperatures for 3 weeks.
