About Penfolds Bin 8 Shiraz Cabernet

If you have explored the wines of Australia you will have noticed that many of them carry the label ‘Bin’ along with a specific number. Bin actually means storage or storage area. Australian wines have a tradition of including their storage or batch number in the name of the wine. However, it is important to note that this is not just about the place it is stored. In reality, it refers to a batch of grapes from a specific plot with different characteristics to the rest of the vineyard that has been vinified. As a result, a certain Bin is created, which gives the wine its name.

Penfolds, Australia’s oldest and most representative winery, obviously works this way too. So you will see different wines with the word ‘Bin’ on the label. Normally the number on the Bin is the original location of the container after bottling. However, when it comes to Penfolds Bin 8 Shiraz Cabernet, the number 8 was given because it uses old oak, a barrel previously used for other wines like Bin 128, Bin 28 and Bin 389. So the number 8 is obviously the common thread.

Made from the successful Australian blend of Cabernet Sauvignon and Syrah, the respectfully grown grapes undergo a short cold maceration. Then the must ferments in stainless steel tanks at a controlled temperature for 3 weeks. Finally, the wine ages for 18 months in used French and American oak barrels. The result is a wine with the house’s easily identifiable style but that also includes the characteristics of each vintage. As Penfolds winemaker Peter Gago says “the source changes, but the house style does not. Every part of the winemaking process from the sun above to the ground below is Penfolds.”
