About Peraj Ha'abib

Peraj Ha'abib is a red wine crafted by Celler de Capçanes within the esteemed D.O. Montsant.
This winery is a cooperative situated in the town of Capçanes (Tarragona).

Peraj Ha'abib is a Kosher wine, specifically produced to be suitable for consumption by the Jewish community. Within Hebrew law, wine holds significant importance and symbolism, necessitating a very particular method of production. The most critical aspect is that the entire wine-making process must be carried out by Jewish individuals, and a rabbi with the requisite authority personally oversees the vinification, intervening as necessary, in accordance with the guidelines of an oenologist who, under no circumstances, may come into contact with the wine. Moreover, all raw materials used are Kosher certified and are exclusively utilized for the production of this type of wine.

Peraj Ha'abib is composed of the varietals Garnacha, Cariñena, and Cabernet Sauvignon. The Garnacha grapes originate from ancient vineyards aged between 50 and 70 years. All vines are planted on terraces at an elevation of approximately 500 meters above sea level on clayey and granitic soils.
The harvest is carried out entirely by hand.

Regarding the vinification process, the must ferments at a controlled temperature ranging from 24 to 28°C over a period of 28 days. All varieties are vinified together. Malolactic fermentation begins in stainless steel tanks and concludes in barrels.

Following vinification, Peraj Ha'abib undergoes a maturation period of 12 months in new Kosher French oak barrels, as well as in barrels that have been used for one year. Finally, prior to its release onto the market, the wine is allowed to settle for 3 months in tanks to further refine.

Peraj Ha'abib boasts a high Kosher certification, is not pasteurized (non-Mevushal), and is suitable for Passover (Pesach). It is a benchmark wine that, vintage after vintage, has garnered positive reviews from specialized critics.

Peraj Ha'abib 2021 unfurls a tapestry of scents with a dominance of ripe fruits such as plums and blackberries, interwoven with hints of cocoa that lend depth. On the palate, its understated spiciness and the ripeness of the fruit strike an elegant balance, while its slightly hearty body ensures a pronounced presence. This red wine is concentrated, presenting a tasting experience rich in subtleties and a silky texture that lingers delightfully.

2016 Peraj Ha'abib 2016 is a deep, balanced and complex red wine. In this vintage the aromas of ripe red fruit stand out, with marked toasted and spicy notes of the aging process. On the palate it is dense and expressive, with volume and with a lingering and long-lasting finish.
2013 Robust and full-bodied. The palate is velvety and fruit-forward, with ripe red fruit taking center stage. Exquisite acidity and finely polished tannins. Harmonious and sophisticated.

Cherry red with garnet highlights. Clear and luminous.

Scents of red fruit are skillfully interwoven with mineral undertones and toasted nuances. Pleasant hints of cocoa and chocolate also emerge.

2010 Large, and with a very broad and powerful attack. Very tasty, velvety and meaty mid palate. The intense and perfectly balanced notes of fruit and oak are noticed along with refined spicy notes and herbal touches. Warmth that contrasts with the freshness provided by its balanced acidity and its minerality. Ripe and creamy tannins. Immensely long and very persistent. A very elegant wine, rich and expressive, powerful and intense.

Powerful and rich aromas, highly expressive and complex. The aromas of toast and balsamic are the first to appear and will stay present while the intense notes of ripe fruit, minerals, underbrush, herbs emerge. The complex spicy notes provide this wine with an elegant sweetness.
