About Philippe Pacalet Chablis Beauroy 1er Cru

In minimal intervention winemaking, excellence arises from four pillars: soil, climate, grape... and people. And if there is a name that embodies this vision with sensitivity and precision, it is Philippe Pacalet.

He is not merely the nephew of the legendary Marcel Lapierre, a pioneer of natural wines. He is also a microbiologist, former director of Prieuré Roch, and since 2001, the soul of a personal endeavour where wine is perceived as a dialogue between the land and its cultivator.

To achieve this, Pacalet forges agreements with winegrowers from some of the finest appellations of the Côte d’Or, but with the stipulation that they work with respect, without chemicals, and in harmony with the terroir. His demands extend beyond the technical. He desires living soils, mindful harvests, and a fermentation that requires no embellishments. Since 2007, he has been vinifying in his winery in Beaune—a former property of the De Montille family—where the wines are crafted unhurriedly, without additives, and with no more intervention than necessary to let the place speak.

Philippe Pacalet Chablis Beauroy 1er Cru is crafted from chardonnay vines over 40 years old, cultivated on clay and limestone soils with ecological practices. In the winery, fermentation is spontaneous with indigenous yeasts and unadulterated, ensuring genuine expression.
