Pio Cesare Barolo Ornato is a wood-aged red wine made by Pio Cesare with the Nebbiolo variety in the DOCG Barolo, in the Piedmont region (Italy).
Founded in 1881, Pio Cesare is one of the pioneering wineries showcasing the extraordinary quality of the Langue terroirs, led by Barolos and Barbarescos. Built along the old Roman walls of the municipality of Alba, this is currently the only winery still operating here. Five generations have worked here, holding onto the traditional style but in recent years introducing the occasional nod to modernity.
Pio Cesare Barolo Ornato comes from a small selection of family vineyards located in Cascina Ornato in Serralunga d'Alba, one of the most historic and prestigious areas in the entire Barolo region. These are small plots that are cultivated in an environmentally friendly way that also seeks the natural balance of the terroir. When the grapes reach optimum ripeness, they are harvested by hand.
When the Pio Cesare Barolo Ornato grapes reach the winery, they ferment in stainless steel tanks at high temperatures and are macerated for a minimum of 30 days. Then most of the wine is aged in large “botti” for about 30 months and a small amount ages in French oak barrels for the first 12 months.
