The process of crafting any sparkling wine is critically hinged on the precise moment when the liqueur de tirage is added. The quality of this mixture—comprised of wine, cane sugar, and yeast—directly influences the caliber of the effervescence produced. Each winery and winemaker holds their unique formula, which, much like a closely guarded secret, is zealously protected. However, this is not the case with Recaredo, where they proudly proclaim that their liqueur is crafted using grape must from their own estate. Undoubtedly, it is the crème de la crème. It is this very same concoction that is utilized in the production of Recaredo Subtil Brut Nature, a sparkling wine that is bound to be an unforgettable experience.
 
To speak of Recaredo is to discuss one of the most significant and high-quality sparkling wine houses. Hailing from the Catalan Penedés (northeast of Spain), this venerable establishment continues to distinguish itself with its extensive aging process for sparkling wines, making this name synonymous with elegance and refined taste. Their passion for indigenous grape varieties, such as xarel·lo, remains fashionable, securing their presence on the tables and wine lists of the finest dining establishments. And now, the moment has come for it to grace yours.
 
The story of Recaredo Subtil Brut Nature begins in the family vineyards situated in Corpinnat, in proximity to the peaks of Montserrat, where the calcareous soils are renowned for their water retention capabilities. This trait is particularly beneficial during periods of drought when the vines must contend with high temperatures. Generally, the yields are low but of exceptional quality, which means that not a single bunch or grape—no matter how small—can be wasted during the harvest (which is carried out manually). Recaredo Subtil Brut Nature originates from the El Roure estate. It is noteworthy that for several years now, Recaredo has been embracing biodynamic practices to nurture their crops, eliminating the use of insecticides and herbicides, thus becoming the first producer in Penedés to be awarded the Demeter certification.
 
Yet, if there is one aspect that has earned Recaredo its illustrious reputation, it is through their extended aging processes. Typically, all of the house's sparkling wines must undergo a minimum of 30 months of maturation. In the case of more exceptional vintages and special cuvées from the winery—such as Recaredo Subtil Brut Nature—the period of repose extends to 47 months. Added to this is the crafting of Recaredo Subtil Brut Nature, which is already remarkable in its own right. Specifically, Recaredo Subtil Brut Nature is made with the still wine from the previous year's harvest (which rests for one year in a tank) to which fresh must from the El Roure estate is added. This blend, once bottled, forms the foundation for the yeast to perform the second fermentation, unleashing the magic of one of the finest sparkling wines you could possibly savor.
