San Cucufate Monasterio is a barrel-aged red wine made with the Tinto Fino variety by the San Cobate winery in Leon, in the Ribera del Duero denomination of origin.
Continuing with the work started by Benedictine monks ten centuries ago, San Cobate makes wines that reflect the magnetism of the beautiful and unique Ribera del Duero landscape. These wines showcase the true expression of each plot in a way that is balanced, elegant and very fine.
San Cucufate Monasterio comes from vineyards located in the Burgos town of Gumiel del Mercado (Castilla y León) that lie more than 860 metres above sea level. The plot has been named “Monasterio” and the vines are planted in clay, limestone and limestone rock soils. The team use environmentally friendly agriculture and the vines grow alongside oaks and local vegetation. When the grapes reach optimum ripeness, they are manually selected in the vineyard and placed in 15 kg boxes.
In the winery, most of the clusters selected to make San Cucufate Monasterio are destemmed and the rest are kept whole. Fermentation takes place in cement tanks at a controlled temperature and with daily pumping over. Then the wine is left to age in various types of barrels and then finally ages in large oak barrels.
San Cucufate Monasterio is a classic D.O. Ribera de Duero wine. A single-plot wine that is closely linked to its origin and is made elegantly without any unnecessary additions. Tradition and finesse in perfect balance.
