About Timo Mayer Bloody Hill

Wine runs through his veins. This isn’t unusual considering he’s the last generation of a family that has been making it for 400 years from their small vineyard in Württemberg (Germany). However, his concerns and desire to break down convention took him far from there, to the region of Victoria (in Australia), where he settled in the Yarra Valley. From there, after working for Steve Webber (owner of De Bortoli Wines) and Gembrook Hill, Timo Mayer produces elegant, minimal intervention wines under his own brand, such as Timo Mayer Bloody Hill.

Timo Mayer Bloody Hill is a red wine made with Pinot Noir which is harvested from vines that grow in volcanic soil, between 200 and 470 meters above sea level. As the name of the wine reflects, the specific place where this red wine comes from is Bloody Hill (with a tone of annoyance) due to the difficulty of working on the steep slopes. From here, Timo Mayer works under the philosophy of minimal intervention, making unique wines which show the full potential of the land (the exact opposite of the classics that were made in the area). To do so, he uses certain techniques and methods of production such as whole bunch fermentation (in fact, he was the first in the area to do so).

Timo Mayer Bloody Hil is hand harvested and destemmed. The fermentation starts naturally in contact with the skins for three weeks. From there, Timo Mayer Bloody Hil will be transferred to oak barrels (70% used), where it will remain for 3 months. After this time, Timo Mayer Bloody Hil is bottled without filtering or fining, in order to convey the full essence of the area. In short: the Yarra Valley and Melbourne at its purest

Timo Mayer Bloody Hill 2020 is a smooth red wine. The nose is dominated by cherries and strawberry. The palate is clean, with medium-bodied silky tannins.
