About Timo Mayer The Doktor

If there is one name that rings out strongly in Australia’s Yarra Valley, it is that of Timo Mayer, a German living in this area east of Melbourne in Victoria. This is where Mayer has his vineyards, which he has named Bloody Hill mainly because of its steepness. Mayer manages to extract great wines from vines that grow on young volcanic soils (deep red) at high altitudes (between 200 and 470 metres).

Mayer belongs to a new generation of Australian winemakers and vintners who have decided to break with the local tradition and make lighter, fruitier wines, as opposed to the big, meaty reds that had been made up to that time.

One of these is Timo Mayer The Doktor, a red made from Pinot Noir, the typical grape in the Yarra Valley (which currently takes up a third of all vineyards). Timo Mayer The Doktor is harvested by hand across the slopes and hills of the vineyard. When they reach the winery, they are weighed and the whole bunches, without destemming or crushing, go directly to the fermentation stage in open tanks using native yeasts, where the stems add an unmistakable tannic and structured character to this wine. Finally, Timo Mayer, a faithful advocate of minimal intervention in the winery, will transfer Timo Mayer The Doktor to used foudres, where it ages for 11 months.

Timo Mayer The Doktor 2020 is a supple yet commanding red wine. Olfactorily, it is exceedingly fragrant. On the palate, it is refined and well-constructed, featuring cherry nuances, robust acidity, and velvety tannins. It possesses a profound concentration.
