El Botijo Blanco is a white wine crafted by Bodegas Frontonio, located in Épila, IGP Valdejalón.
Bodegas Frontonio was founded in 2008 by two friends from Aragon, Fernando Mora, Master of Wine, and Mario López, winemaker at Bodegas Borsao.
The mission of Bodegas Frontonio is to elevate the Valdejalón region and its vineyards, primarily planted with old Grenache vines and benefiting from a continental Mediterranean climate. They manage approximately 50 hectares, certified organic since 2017. Most of the vineyards are located around Épila, with varying ages, exposures, altitudes, and soil types. The climate is continental Mediterranean, with low rainfall (200-500 l/m2/year), 300 hours of sunshine annually, and numerous windy days, known as El Cierzo.
Currently, Bodegas Frontonio produces garage wines in the backroom of a small bulk wine cellar, vinifying with minimal intervention, plot by plot. The result is outstanding wines, genuine and full of character.
El Botijo Blanco is a wine made from Garnacha Blanca sourced from vines over 35 years old, situated in Épila, on deep limestone soils.
Harvesting is done by hand. In the winery, the grapes are cooled to 4°C for 48 hours, then destemmed, pressed, and left to macerate for six hours. After this period, the must begins to ferment with selected yeasts, remaining in the tank on its lees for three months, with stirring twice a week.
