About Clave de Tábula

Clave de Tábula is a wine from Ribera del Duero made of 50 year old Tempranillo vines from a sole vineyard located at more than 930 m altitude. In its elaboration, after the manual harvest, the grapes go through a selection table where bunches are first selected, then desteemed and finally the grains go through a second selection. It goes though a prefermentative maceration for 6 days, after which an alcoholic fermentation is conducted in 30 hl French oak vats. After that, a malolactic fermentation in French oak barrels and a maceration for 22 days in French oak vats are conducted. It goes through an ageing for 12-14 months in French oak barrels and 3-6 months in 15 hl French oak foudres. A very well elaborated and pleasant red wine.
2009 It is a red wine with an appealing attack followed by very nice and fresh sensations perfectly integrated with the moderate notes provided during its ageing. It shows a differentiating refinement and elegance.

Nice and lively intense red colour with violet reflections. High robe. Clean and bright.

High intensity nasal aromas which take some time to open up. As the wine gets aerated, the varietal notes typical of the Tempranillo are released: aromas of red fruit with marked floral and mineral hints.
