Elvio Cogno Barolo Cascina Nuova is a wood-aged red wine made by Elvio Cogno with the Nebbiolo variety in the DOCG Barolo, in Piedmont (Italy).
After spending a long time working it Marcarini, in 1990 Elvio Cogno acquired a historic 18th century estate in La Morra and decided to set up his own project. This included 11 hectares of vineyards lying on a peak called Bricco Ravera. Working with great care, he began producing classic red wines of superior quality. The project is now run with the same philosophy by Nadia Cogno and her husband Valter Fissore.
Elvio Cogno Barolo Cascina Nuova comes from a 1.5-hectare vineyard lying at an altitude of 380 metres above sea level. The vines are 12 years old, on average, and planted in limestone and clay soils, which are sustainably cultivated with limited yields. When the grapes are ripe they are harvested manually.
Once the Elvio Cogno Barolo Cascina Nuova grapes reach the winery, they are pressed and fermentation takes place with native yeasts in stainless steel tanks at a controlled temperature with automatic pumping over. The wine is then aged in large Slovenian oak barrels for 24 months. Finally, it is bottled unfiltered and spends 6 months in the winery before being sold.
