About Enate Cabernet Sauvignon-Merlot

Almudena Feal, sommelier at the O'Pazo restaurant (which boasts a Michelin star), asserts that "a wine should cost at least 8 euros in a supermarket to ensure quality." This was reported by Esquire magazine in an interview with the expert. And at that price point (give or take a euro), you'll find Enate Cabernet Sauvignon-Merlot, one of the wines most recommended by chefs and sommeliers. 
 
Right in the DO Somontano, one can trace the origin of this red, a blend of cabernet sauvignon and merlot, which astonishes everyone who tastes it. Specifically, these varieties are cultivated in proprietary vineyards, located at an altitude of approximately 600 metres, precisely in the Valle Enate vineyard in Huesca, where infertile soils abound. Here, viticulture is conducted with total respect, always aiming for the vineyards to grow robustly without the need for chemical treatments. In fact, manual harvesting is one of the essential requirements that make Enate Cabernet Sauvignon-Merlot a unique wine. And the care continues in the winery! Upon arrival at the facilities, Enate Cabernet Sauvignon-Merlot is carefully destemmed and crushed, with each variety fermenting separately in stainless steel tanks. After the yeasts have done their work, Enate Cabernet Sauvignon-Merlot also undergoes malolactic fermentation and is transferred to French and American oak barrels, where it will rest for about 6 months before being further refined in the bottle.
