Italy, one of the foremost vineyard cultivators in the world, is home to genuine luxury projects that celebrate the wealth and diversity of its wine heritage. Matteo and Giordano Fasoli, the fourth generation of winemakers, embody this family tradition in their wine production. Since their great-grandfather began distributing wine in demijohns by horse and cart to the finest taverns in the Verona area, the Fasoli family has highlighted the significance of viticulture in Italy, particularly in the Val d'Illasi. Today, they blend traditional techniques with modern innovations, striving to preserve the essence of their heritage through sustainable practices that adapt to the challenges of the contemporary market. As they describe themselves, they are "farmers at heart" who apply past traditions to offer wines that respect the consumer, nature, and the environment.
Under this work philosophy, Fasoli Gino Pigio Pinot Grigio is a single-varietal pinot grigio sourced from vines planted in the valley floor on gravelly and sandy soils. It is cultivated without pesticides or herbicides, prioritising biodiversity and ecological balance in the vineyards, and after manual harvesting, the grapes are transported to the winery as swiftly as possible to be carefully selected and crushed. Fermentation takes place in stainless steel tanks at a controlled temperature for 15 - 20 days. Afterwards, the wine matures on fine lees for several months in these same tanks before it is finally bottled.
