Their wine Fasoli Gino Soave Borgoletto is an outstanding single-varietal made from the indigenous garganega grape, cultivated organically in the picturesque vineyards of the Soave region. The vines are planted in calcareous and sandy soils at an altitude of 100 metres, contributing to the wine's complexity and minerality. Harvesting is done manually, ensuring that only the finest grapes are selected at the optimal moment of ripeness. Once in the winery, the grapes are meticulously sorted, destemmed, and gently pressed to preserve their aromatic characteristics. This process includes a cold skin maceration lasting between 10 and 15 hours, allowing for the extraction of aromas and flavours without imparting excessive tannicity. Finally, fermentation takes place in stainless steel tanks at controlled temperatures for approximately 10 days, ensuring the freshness and fruity expression of the garganega.
