Nowadays, pinot noir is once again employed in crafting premium cavas, such as Ars Collecta Jaume de Codorníu Brut Gran Reserva. Thus, the blend of Ars Collecta Jaume de Codorníu Brut Gran Reserva is as follows: the chardonnay, from shallow soils, contributes concentration; the pinot noir provides a more mineral profile, and the xarel·lo imparts the elegance and acidity that so distinctly characterise this sparkling wine.
With minimal intervention, Ars Collecta Jaume de Codorníu Brut Gran Reserva is always crafted following traditional methods. The harvest is done by hand, and the grapes are brought to the winery, where the bunches are destemmed and pressed. Once the must is obtained, Ars Collecta Jaume de Codorníu Brut Gran Reserva ferments at a controlled temperature and is prepared for blending. After the blend, the resulting wine is bottled and prepared for a secondary fermentation in the bottle. Once those bubbles are achieved, Ars Collecta Jaume de Codorníu Brut Gran Reserva is left in the same bottle to rest for approximately 40 months in contact with its lees.
