Ars Collecta Blanc de Blancs Reserva is a Brut Reserva sparkling wine crafted by the Codorníu winery using the typical white varieties of the DO Cava and aged underground at a constant temperature for 35 months.
The Codorníu Raventós group boasts a legacy spanning five centuries, a wealth of expertise that enables them to produce expressive cavas renowned worldwide. This is exemplified in Ars Collecta Blanc de Blancs Reserva, a Reserva cava, born from profound experience and meticulous understanding of the vineyards. Predominantly, the chardonnay variety is sourced from the continental climate of Costers de Segre (Lleida), while the xarel·lo and parellada hail from the Mediterranean climate of the central Penedès.
The harvest of Ars Collecta Blanc de Blancs Reserva commences in early August, conducted at night to avoid high temperatures and potential oxidation. Once at the winery, a gentle pressing is carried out using a pneumatic press, and the must is fermented in small batches at a constant temperature of 17°C, with a small percentage vinified in French foudres to enhance the cava's nobility. Following the blend, it is stored in the cellar for 35 months. Once ready, the sediments accumulated over time are removed through riddling and disgorgement. Afterward, expedition liqueur is added, and the bottle is sealed with a cork stopper.
